Bolo de cenoura (Carrot cake)

This cake is very easy to prepare because you put all ingredients in a blender. 

PORTUGUESE ENGLISH
Ingredientes: Ingredients:
3 cenouras médias (picadas) 3 medium-sized carrots (chopped)
4 ovos 4 eggs
1 xícara de óleo 1 cup of oil
2 xícaras de açúcar 2 cups of sugar

3 xícaras de farinha de trigo

3 cups of all purpose flour
1 colher da chá de fermento em pó 1 teaspoon of baking powder
Modo de fazer: Preparation:
1. Bata os ingredientes líquidos (cenouras, ovos, óleo) no liquidificador. 1. Blend the liquid ingredients (carrots, eggs, oil) in a blender.
2. Adicione os ingredientes secos (açúcar, farinha, fermento em pó) e bata bem. 2. Add the dry ingredients (sugar, flour, baking powder) and blend well.
3. Coloque a massa numa fôrma untada com manteiga e polvilhada com farinha de trigo. 3. Put the cake mixture in a mould previously greased with butter and dusted with wheat flour.
4. Asse o bolo em forno quente (180 graus) por 30-40 minutos ou até ficar dourado. 4. Bake the cake in preheated oven (330 F) for 30-40 minutes or until golden brown and done.
5. Cubra o bolo com uma cobertura de chocolate (opcional) 5. Top the cake with a chocolate topping (optional)
6. Deixe o bolo esfriar. 6. Let the cake cool down.
7. Desenforme o bolo e sirva. 7. Remove the cake from the mould and serve.
Cobertura de chocolate: Chocolate topping:
Coloque 8 colheres de açúcar, 2 colheres de manteiga ou margarina e 2 colheres de chocolate em pó numa panela. Cozinhe em fogo baixo, mexendo sempre até a mistura soltar da panela. Put 8 tablespoons of sugar, 2 tablespoons of butter or margarine and 2 spoons of chocolate powder in a saucepan. Cook over low heat for a while, stirring constantly until the mixture loosens from the bottom of the pan.

Remarks:

  • It's important that you blend first the liquid ingredients before adding the dry ingredients. 
  • If you prefer, you can top the cake with a ready-to-use chocolate topping, with your favorite topping or just dust it with icing sugar.
