Bolo de fubá (Corn meal/flour cake)

"Bolo de fubá" is a rustic cake and it's delicious when served for breakfast.

Ingredientes: Ingredients:
200 gr. de manteiga 200 gr of butter
1 xícara de açúcar 1 cup of sugar
2-3 ovos 2-3 eggs

1 xícara de fubá

1 cup of corn meal/flour

˝ xícara de farinha de trigo

˝ cup of all purpose flour

˝ xícara de leite

˝ cup of milk
1 colher da chá de fermento em pó 1 teaspoon of baking powder
2-3 colheres de sopa de coco ralado ou queijo ralado tipo parmesăo (optional) 2-3 tablespoons of coconut flakes or grated parmesan cheese (optional)
Modo de fazer: Preparation:
1. Bata bem a manteiga e o açúcar. 1. Beat the butter and the sugar well.
2. Adicione os ovos e bata bem  2. Add the eggs and beat well.
3. Adicione o fubá, a farinha, o leite, o fermento e bata bem. 3. Add the corn meal/flour, the wheat flour, the milk, the baking powder and beat well.
4. Coloque a massa numa fôrma untada com manteiga e polvilhada com farinha de trigo. 4. Put the cake mixture in a mould previously greased with butter and dusted with wheat flour.
5. Asse o bolo em forno quente (200 graus) por 30-40 minutos ou até ficar dourado. 5. Bake the cake in preheated oven (350 F) for 30-40 minutes or until golden brown and done.
6. Deixe o bolo esfriar. 6. Let the cake cool down.
7. Desenforme o bolo e sirva. 7. Remove the cake from the mould and serve.

Remarks:

  • You can find corn meal/flour in supermarkets or in deli shops.
  • Instead of coconut flakes or grated parmesan cheese, you can add some fennel seeds (erva-doce) to the cake mixture.
