Caldo de galinha (Home-made chicken broth)

Ingredientes: Ingredients:
1 peito de frango (com pele e osso) 1 chicken breast (with skin and bones)
1 colher de sopa de óleo 1 tablespoon of oil
1 cebola pequena picada 1 small chopped onion
1 dente de alho amassado 1 clove of crushed garlic
1 litro de água fervente 1 liter of boiling water
1 folha de louro 1 bay leaf
salsinha e cebolinha picada chopped parsley and spring onion
1 colher de chá de sal 1 teaspoon of salt
1 pitada de pimenta-do-reino 1 dash of black pepper
Modo de fazer: Preparation:
1. Lave o peito de frango e seque-o com uma toalha de papel. 1. Wash the chicken breast and dry it with a paper towel.
2. Esquente uma colher de óleo numa panela. 2. Heat a tablespoon of oil in a pan.
3. Adicione a cebola, o alho, o frango e frite até dourar. 3. Add the onion, the garlic, the chicken and stir-fry until golden brown.
4. Adicione a água, o louro, a salsinha, a cebolinha, o sal, a pimenta e deixe cozinhar em fogo médio por meia hora ou até o frango ficar macio. 4. Add the water, the bay leaf, the parsley, the spring onion, the salt, the pepper and let it cook under medium heat for about half an hour or until the chicken is tender.
5. Tire o frango da panela e reserve-o para recheios e sanduíches.  5. Remove the chicken from the pan and save it for fillings and sandwiches.
6. Coe o caldo e reserve-o para sopas e outros pratos.  6. Strain the broth and save it for soups and other dishes.

Remarks:

  • You can cook the chicken in a pressure cooker. It takes only 10-20 minutes.
  • Instead of chicken breast, you can also use the whole chicken. Keep in mind that if you use the whole chicken, the broth will contain more fat. Tip: After straining the broth through a sieve, keep it in the fridge overnight and skim the fat from the surface.
  • You can store home-made chicken broth in small containers and freeze it.
  • Home-made chicken broth can be used for soups, rice dishes and sauces.
  • You can replace the home-made chicken broth with a chicken cube dissolved in water, but the taste is not the same. I don't use chicken cubes because most of them contain MSG (Mono Sodium Glutamate).
