Couve refogada (Sautéed kale)

 

Sautéed kale is served with "virado de feijão" and "feijoada". It's one of the "virado à  paulista" dishes.

 

PORTUGUESE ENGLISH
Ingredientes: Ingredients:
1-2 maço(s) de couve 1-2 bunch(es) of kale
2 colheres de sopa de óleo 2 tablespoons of oil
1 cebola picada 1 chopped onion
1 dente de alho amassado (opcional) 1 clove of crushed garlic (optional)
sal e pimenta a gosto salt and black pepper to taste
Modo de fazer: Preparation:
1. Retire os talos da couve. 1. Remove the stems of the kale.
2. Lave a couve e deixe escorrer a água. 2. Rinse the kale and drain the water.
3. Coloque uma folha sobre a outra e enrole. 3. Put a leaf on the top the other and roll it.
4. Corte a couve em tiras bem finas. 4. Cut the kale into fine strips.
5. Frite a cebola e o alho em óleo quente. 5. Sauté the onion and the garlic in hot oil.
6. Adicione a couve, o sal e a pimenta e mexa bem. 6. Add the kale,the salt and pepper and stir well.
7. Adicione um pouco de água e tampe a panela. 7. Add a bit of water and cover the pan with a lid.
8. Cozinhe a couve em fogo médio até ficar macia. 8. Cook the kale under medium heat until done.
9. Coloque a couve numa travessa e sirva. 9. Put the kale on a serving plate and serve it.

Remarks:

  • There are different kinds of kale. Buy any kind that you can find in your area.

  • If you can't find fresh kale, you can buy frozen kale. Some supermarkets have frozen kale.
