Maionese (Brazilian style potato salad)

 

"Maionese" is a typical Brazilian vegetable salad.

 

PORTUGUESE ENGLISH
Ingredientes: Ingredients:
4-5 batatas 4-5 potatoes
2 cenouras 2 carrots
100-150 gr. de vagem 100-150 g of green beans
1 xícara de ervilha congelada 1 cup of frozen green peas
10 azeitonas 10 olives
1 lata pequena de palmito 1 small can of hearts of palm
1 vidro de maionese 1 jar of mayonnaise
1 colher de sopa de óleo de oliva (opcional) 1 tablespoon of olive oil (optional)
1 colher de cebola picadinha (opcional) 1 tablespoon of finely chopped onion (optional)
1 colher de salsinha picadinha (opcional) 1 tablespoon of finely chopped parsley (optional)
sal e pimenta a gosto salt and black pepper to taste
Modo de fazer: Preparation:
1. Lave as batatas e cozinhe as batatas em água e sal. 1. Rinse the potatoes and cook them in water and salt.
2. Descasque as cenouras, pique em pedacinhos e cozinhe em água e sal. 2. Peel the carrots, cut them into small pieces and cook them in water and salt.
3. Lave a vagem, pique em pedacinhos e cozinhe em água e sal.  3. Rinse the green beans, cut them into small pieces and cook them in water and salt.
4. Cozinhe a ervilha em água e sal. 4. Cook the green peas in water and salt.
5. Escorra o palmito e pique em pedaços. 5. Drain the palm hearts and cut them into small pieces.
6. Escorra as azeitonas e corte em pedacinhos. 6. Cut the olives into small pieces.  
7. Depois de cozidos, escorra a água dos legumes, deixe esfriar e reserve. 7. Once all vegetables are cooked, drain the water: allow them to cool down and save them for later. 
8. Descasque as batatas cozidas e corte em pedaços pequenos. 8. Peel the cooked potatoes and cut them into small pieces.
9. Coloque todos os ingredientes numa tigela, adicione a maionese, o óleo, a cebola, a salsinha e sal e pimenta a gosto. 9. Put all ingredients in a bowl, add the mayonnaise, the oil, the onion, the parsley and salt and pepper to taste.
10. Mexa bem todos os ingredientes, cubra a tigela com um filme plástico e coloque a tigela na geladeira até a hora de servir. 10. Mix well all ingredients, cover the bowl with a plastic film and keep the bowl in the fridge until serving. 

Remarks:

  • I like "Hellmann's" mayonnaise, but you can use any other brand or make your own mayonnaise.

  • You can prepare this salad one day ahead and keep it in the fridge.
