Pão de queijo (Cheese bread or cheese rolls)

“Pão de queijo” is typical Brazilian and it’s a delicious snack, which can be found at every “lanchonete” in Brazil.

Ingredientes: Ingredients:
1 xícara de água 1 cup of water
1 xícara de leite 1 cup of milk
1/2 xícara de óleo 1/2 cup of oil
1 colher de chá de sal 1 teaspoon of salt
1 pacote de polvilho (450 gr.) 1 pack of tapioca starch (450 g)
2 a 3 ovos 2 to 3 eggs
200 gr. de queijo parmesão ralado 200 g of grated parmesan cheese
Modo de fazer: Preparation:

1. Ferva numa panela grande a água, o leite, o óleo e o sal.

1. Bring to boil in a big pan the water, the milk, the oil and the salt.

2. Tire a panela do fogo e adicione o polvilho. Mexa bem com uma colher de pau e deixe esfriar.

2. Remove the pan from the heat and add the tapioca starch. Mix well with a wooden spoon and let it cool down.
3. Ponha a mistura numa tigela, adicione os ovos e amasse bem. 3. Put the mixture in a bowl, add the eggs and knead well.

4. Adicione o queijo ralado e continue amassando até obter uma massa lisa.

4. Add the grated cheese and keep kneading until the dough is smooth. 
5. Pegue a massa com uma colher de sopa e faça bolinhas. Dica: Passe óleo na mão antes de fazer as bolinhas. Lave a mão de vez em quando se necessário. 5. Roll 1 tablespoon of mixture into small balls. Tip: Grease your hands with oil before making the balls. Wash your hands once in a while if necessary.
6. Coloque as bolinhas numa forma untada com óleo ou forrada com papel manteiga.  6. Place the balls on a baking tray greased with oil or lined with baking paper.
7. Asse os pães de queijo em forno quente (200 graus) por 20 minutos ou até dourar. 7. Bake the cheese rolls in hot oven (350 degrees) for about 20 minutes or until golden brown.
8. Coloque os pães de queijo numa cesta e sirva quente. 8. Put the cheese rolls in a basket and serve them warm.


Remarks:

  • This recipe makes about 70 small cheese rolls.

  • Tapioca starch can be found in Asian grocery stores. It comes in a clear plastic bag and the standard pack has 450 grams.

  • Brazilians usually knead the dough by hand. It’s really hard work. I prefer to use a mixer to knead the dough.

  • “Pão de queijo” can be served as an appetizer or snack.

  • “Pão de queijo” can be frozen and baked directly from the freezer. Tip: Place the cheese rolls on a tray lined with baking paper. Put the tray in the freezer. When the cheese rolls are frozen, put them in a plastic bag and put them back in the freezer.  

  • You can find "pão de queijo" mix (Yoki) in Brazilian supermarkets. It's very practical and convenient for those people who don't have time or don't like cooking.

  • "Pão de queijo" is gluten-free.
