Pudim de coco (Coconut pudding)

 

 

 "Pudim de coco" is also known as "manjar branco" in Brazil.

 

PORTUGUESE ENGLISH
Ingredientes: Ingredients:
A. Pudim: A. Pudding:
1 lata de leite de coco 1 can of coconut milk
1 lata de leite (use a lata do leite de coco para medir o leite) 1 can of milk (use the can from the coconut milk to measure the milk)
6 colheres de açúcar 6 tablespoons of sugar
3 colheres de maisena 3 tablespoons of corn starch
3 colheres de coco ralado 3 tablespoons of coconut flakes
B. Calda de ameixa: B. Prune sauce:
3 xícaras de água 3 cups of water
1 ½ xícara de açúcar 1 ½  cups of sugar
15-20 ameixas sem caroço 15-20 pitted prunes
Modo de fazer: Preparation:
A. Pudim: A. Pudding:
1. Coloque todos os ingredientes numa panela e mexa bem. 1. Put all the ingredients in a pan and mix well.
2. Leve a mistura pra cozinhar em fogo médio, mexendo sempre por 10-15 minutos até a mistura soltar do fundo da panela e ficar com a consistência de creme. 2. Let the mixture cook over medium heat for 10-15 minutes, stirring it constantly until the mixture loosens from the bottom of the pan and it is thick like cream.
3. Ponha o creme numa fôrma de pudim (molhada com água fria) e deixe esfriar. 3. Put the cream in a pudding mold (previously rinsed with cold water) and allow it to cool down.
4. Coloque o pudim na geladeira e desenforme-o quando estiver bem gelado. 4. Put the pudding in the fridge and remove it from the mold when it is really cold. 
B. Calda de ameixa: B. Prune sauce:

1. Coloque todos os ingredientes numa panela

1. Put all the ingredients in a pan. 

2. Leve a mistura pra ferver em fogo médio por uns 30 minutos ou até o líquido ficar com a consistência de xarope. 2. Bring the mixture to a boil and let it cook over medium heat for about 30 minutes or until it forms a syrup.
3. Deixe a calda esfriar e depois coloque-a na geladeira. 3. Allow the sauce to cool down and then put it in the fridge.
4. Decore o pudim com as ameixas e coloque a calda sobre o pudim antes de servir. 4. Decorate the pudding with the prunes and pour the sauce over the pudding before serving.

Remarks:

  • You can either use a medium size mold or small molds. 

  • You can find coconut milk in Brazilian supermarkets and in Asian grocery stores.

  • In Brazil, coconut milk is sold in a glass bottle and in Asia in a can.
