Quibe (Bulgar wheat/meat balls)

 "Quibe", also know as "kibe", was brought to Brazil by the people from the Middle East.

Ingredientes: Ingredients:
250 gr. de triguinho para quibe 250 g. of crushed bulgar wheat
500 gr. de carne moída 500 g. of minced beef
1 cebola picada 1 chopped onion
1-2 dente(s) de alho amassado 1-2 clove(s) of crushed garlic
folha de hortelã picada finely chopped fresh mint leaves
salsinha picada finely chopped parley
1 colher de sopa de sal 1 tablespoon of salt
pimenta-do-reino a gosto ground black pepper to taste
óleo para fritar oil for deep-frying
Modo de fazer: Preparation:
1. Coloque o triguinho numa panela e adicione água quente (um dedo acima do triguinho). 1. Put the bulgar wheat in a pan and add boiling water (one finger over the bulgar wheat).
2. Tampe a panela e deixe o triguinho descansar por uma hora. 2. Cover the pan with a lid and let the bulgar wheat rest for an hour.
3. Escorra a água do triguinho se necessário e reserve. 3. Drain the water from the bulgar wheat if necessary and set it aside.
4. Coloque a carne moída numa tigela. 4. Put the meat in a mixing bowl.
5. Adicione o triguinho já escorrido. 5. Add the drained bulgar wheat.
6. Adicione a cebola, o alho, a hortelã, a salsinha, o sal e a pimenta. 6. Add the onion, the garlic, the mint, the parsley, the salt and the pepper. 
7. Misture todos os ingredientes muito bem. 7. Mix well all the ingredients.
8. Cubra a tigela com um filme plástico e deixe descansar por 3-5 horas na geladeira para pegar o tempero.   8. Wrap the bowl with a plastic film and let it rest for about 3-5 hours in the fridge to enhance the seasoning.
9. Faça rolinhos com a mistura. Se necessário, molhe a mão antes de fazer os rolinhos.  9. Make small rolls with the mixture. If necessary wet your hands before making the rolls.
10. Frite os quibes em óleo quente até dourar. 10. Deep-fry the rolls in hot oil until golden brown.
11. Coloque os quibes num folha de papel toalha e sirva quente com limão ou molho de pimenta. 11. Drain the rolls on a paper towel and serve them hot with lemon juice or chilli sauce.

Remarks:

  • You can find bulgar wheat in Brazilian supermarkets, in Middle East grocery stores or in deli shops.
  • You can also soak the bulgar wheat in cold water overnight, but if you use hot water, you will save time and the "quibe" will be tender.
  • Instead of deep-frying, you can bake the "quibe" mixture in a greased baking tray for about 30 minutes or until done. Baked "quibe" is called "quibe assado" in Portuguese.
  • Instead of buying minced beef, you can buy a nice piece of beef and mince it in the food processor.
  • Quibe” can be frozen, but it must be thawed (2 hours) before deep-frying. Tip: Place the rolls on a tray lined with baking paper. Put the tray in the freezer. When the rolls are frozen, put them in a plastic bag and put them back in the freezer.
  • The traditional "quibe" has a minced filling, but "quibe" without filling is also delicious and easier to make.
