Sopa de legumes

Vegetable soup


There are many variations to this soup:


  1. To have a vegetable rice soup (sopa de arroz com legumes), just add 1/2 cup of rice to the vegetables (see number 3). If necessary, add some more boiling water to the soup.
  2. To have a vegetable noddle soup (sopa de macarrão com legumes), just add 1 cup of your favorite noodles 15 minutes before the soup is done. If necessary, add some more boiling water to the soup.
  3. To have a creamy vegetable soup (sopa creme de legumes), just blend the soup with a hand blender before serving it.
Ingredientes: Ingredients:
1 colher de sopa de óleo tablespoon of oil
1 cebola pequena picada 1 small chopped onion
1 dente de alho amassado 1 clove of crushed garlic
2-3 batatas picadas em cubos 2-3 potatoes cut into cubes
1 cenoura picada picada em cubos 1 carrot cut into cubes
100 gr de vagem picada 1 green beans cut into pieces
2 tomates picados (sem pele/semente) 2 chopped tomatoes (peeled/seedless)
salsinha e cebolinha picada chopped parsley and spring onion
2 litros de água fervente 2 liters of boiling water
1 cubo de caldo de carne/galinha (opcional) 1 chicken/meat bouillon cube (optional)
sal e pimenta-do-reino a gosto salt and black pepper to taste
Modo de fazer: Preparation:
1Esquente uma colher de óleo numa panela. 1. Heat a tablespoon of oil in a saucepan.
2. Adicione a cebola, o alho e refogue até dourar. 2. Add the onion, the garlic and stir-fry until golden brown.
3Adicione os legumes, a salsinha, a cebolinha e mexa bem. 3. Add the vegetables, the parsley, the spring onion and mix well.
4Adicione a água, o caldo de carne/galinha, o sal, a pimenta e deixe cozinhar em fogo médio por 30-40 minutos. 4. Add the water, chicken/meat bouillon cube, the salt, the pepper and let it cook under medium heat for 30-40 minutes.
5. Coloque a sopa numa tigela e sirva. 5. Put the soup in a bowl and serve it.



  • This recipe is for 4-6 servings.
  • Instead of chicken bouillon cube, you can use home-made chicken broth
  • To remove the skin of the tomato, make a cross with a sharp knife at the bottom of the tomato and put the tomato in boiling water for some seconds. The skin will begin to split around the cross and it can be easily removed.
  • If you wish, you can add other vegetables (zucchini, broccoli, cabbage, etc.) to the soup or make a soup with your favorite vegetables only.
