Tutu de feijão (Beans with manioc flour)

 

"Tutu de feijão" and "Virado de feijão" are typical Brazilian dishes and very similar. "Tutu de feijão" is made with mashed beans and thickened with toasted manioc flour (farinha de mandioca torrada) while "Virado de feijão" is made with whole beans and thickened with precooked cornflakes (farinha de milho).

Ingredientes: Ingredients:
2 xícaras de feijão cozido 2 cups of cooked beans
2 colheres de sopa de óleo 2 tablespoons of oil
1 cebola pequena picada 1 small chopped onion
1 dente de alho amassado 1 clove of crushed garlic
1-2 xícara(s) de água 1-2 cup(s) of water
1 folha de louro 1 bay leaf
salsinha e cebolinha (opcional) parsley and spring onion (optional)
1 colher de chá de sal 1 teaspoon of salt
1 pitada de pimenta-do-reino 1 dash of ground black pepper
4-6 colheres de farinha de mandioca torrada para engrossar 4-6 tablespoons of toasted manioc flour to thicken
Modo de fazer: Preparation:
1. Frite a cebola e o alho em óleo quente. 1. Sauté the onion and the garlic in hot oil.
2. Adicione o feijão, a água, todos os temperos e mexa bem. 2. Add the beans, the water, all the seasonings and stir well.
3. Deixe ferver em fogo médio até o caldo do feijão engrossar.  3. Bring it to a boil under medium heat until the liquid is thick.
4. Tire a folha de louro e bata o feijão com um mix. 4. Remove the bay leaf and puree the beans with a hand blender.
5. Adicione a farinha de mandioca aos poucos, mexendo sempre. 5. Add the manioc flour little by little, stirring constantly.
6. Pare de adicionar farinha de mandioca quando o tutu ficar com a consistência de purê. 6. Stop adding manioc flour when the mixture is like a puree.
7. Coloque o tutu numa tigela e sirva.  7. Put the mashed beans in a bowl and serve it.

Remarks:

  • "Farinha de mandioca torrada" is toasted manioc flour.

  • You can find "farinha de mandioca" in Brazilian grocery stores.

  • Instead of pinto beans, you can use black beans.
