Virado de feijão (Beans with corn flour)

"Virado de feijão" and "Tutu de feijão" are typical Brazilian dishes and very similar. "Virado de feijão" is made with whole beans thickened with precooked cornflakes (farinha de milho) while "Tutu de feijão" is made with mashed beans thickened with toasted manioc flour (farinha de mandioca torrada).

2 xícaras de feijão cozido 2 cups of cooked beans
2 colheres de sopa de óleo 2 tablespoons of oil
1 cebola pequena picada 1 small chopped onion
1 dente de alho amassado 1 clove of crushed garlic
1-2 xícara(s) de água 1-2 cup(s) of water
1 folha de louro 1 bay leaf
salsinha e cebolinha (opcional) parsley and spring onion (optional)
1 colher de chá de sal 1 teaspoon of salt
1 pitada de pimenta-do-reino 1 dash of black pepper
4-6 colheres de farinha de milho para engrossar 4-6 tablespoons of precooked cornflakes to thicken
Modo de fazer: Preparation:
1. Frite a cebola e o alho em óleo quente. 1. Sauté the onion and the garlic in hot oil.
2. Adicione o feijão, a água, todos os temperos e mexa bem. 2. Add the beans, the water, all the seasonings and stir well.
3. Deixe ferver em fogo médio até o caldo do feijão engrossar.   3. Bring it to a boil under medium heat until the liquid is thick.
4. Adicione a farinha de milho aos poucos, mexendo sempre.  4. Add the corn flour little by little, stirring constantly.
5. Pare de adicionar farinha quando o virado ficar com a consistência de purê. 5. Stop adding corn flour when the mixture is like a puree.
6. Coloque o virado numa tigela e sirva.  6. Put the beans in a bowl and serve it.

Remarks:

  • "Farinha de milho" is pre-cooked cornflakes. It should not be confused with corn flour, which in Portuguese is called "fubá". 

  • You can find "farinha de milho" only in Brazilian supermarkets.

  • Instead of "farinha de milho" (pre-cooked cornflakes), you can use "farinha de mandioca torrada" (toasted manioc flour), which is easier to find abroad, but only in Brazilian grocery stores.

  • "Virado de feijão" is delicious when served with just a fried egg.

  • You can add bacon, kale or sausage to the onion and garlic. It adds taste to the beans, if you serve it on its own.

  • "Virado de feijão" is one of the "virado à paulista" dishes.
